do a lot of low-fat, international cooking, and this pot is great because when cooking vegetables, in particular, it is large enough to allow them room to stay intact and not get mashed up when stirring. It is also great for searing boneless, skinless chicken thigh cubes and other meats in one layer with a minimum of fat, prior to continuing with the stew or curry. I like to use extra virgin organic coconut oil for cooking as there are many health benefits, and the oil has a high smoking temperature, which extra virgin olive oil does not (I also use extra virgin olive oil for cooking, but rarely any other fats). I highly recommend this pot
