I've had this pan for a few years; it was bought to make an instant bread recipe that required using a metal pan (to be able to go into a cold oven while it's heating up), and I only had glass loaf pans at that time. I guess I should've been wary when reading about the "micro-textured pattern" that allegedly "minimizes surface contact to improve airflow for even baking." This is just nonsense: if you pour batter/dough into this, it'll get into all those nooks -- and then is close to impossible to remove again. Why wouldn't increasing the actual surface area (by adding little pyramids) for a near-liquid result in a more area to stick to? What airflow are we talking about? Under a dough? Marketing copy that sounds impressive, but actually hints at what's wrong with this pan: no matter how well you treat it - grease with butter only, soft cloth to clean, it just sticks on the bottom. Not on the sides, by the way. Maybe this thing would work better if they'd just left the bottom the same as the sides. Now, after a few years, the tips of the pyramids started to flake off. I had almost given up baking my favorite bread when I discovered a loaf pan that's NOT non-stick, just heavy-duty aluminum. That one is just a joy to use. (One time I thought something wouldn't rise very high and didn't grease all the way to the top, yet the baked good came out without any problems anyway, even though the dough had no oil in it.) And it's also made in the US and even a bit cheaper, though it'll last forever.
