These are great knives. I use the large one to cut vegetables. Our butcher block large knife broke so we have been using this instead. It fits perfectly into the butcher block. And we use the little knife for cheeses and soft berries

Best think about these knives is the blade shape. A straight cutting edge is far easier to sharpen than a curved one. The steel is medium hardness, so it takes an edge quite easily which is perfect for keeping them sharp. You'll appreciate this because an easy to sharpen knife will not hold an edge as long. You have to keep it sharp, never let it get dull...too hard to bring it back.
