These are great. You just chop everything up on them, curl the mats carefully with the meat/veggies/etc and pour it into the pot on the stove. This is my second purchase as I love leaving the purple one out on the counter and I grabbed it in error (I have a purple prep mat which does go in the oven) to put under a pizza on a pan that went into the oven. Of course, this one isn't made for heat so I ruined it (luckily it didn't ruin the pizza).
