Solid Choice for Home Cooks
I've been using my Viking 2-Piece Blue Carbon Steel Fry Pan Set for about a month now, and it has excellent heat distribution, a comfortable handle, and balanced design. My only concern is to get the most out of the pans they require careful cleaning and maintenance. You must follow instructions for seasoning and cleaning. So far, I've had no issues with sticking or rust. This review was written by a full-time Beyond, Inc. employee. I was asked for my honest feedback on this product.
Two excellent carbon steel pans
I love these pans. I bought this set a couple of years ago. I use them for stirfries steaks, and burgers. They are a great substitute for a wok. I love how quickly these pans reach temperature which saves a lot of time in the kitchen. My other fry pans are getting lonely from lack of use. You should season them properly the first few times. If you have an electric range, it is better to use these pans on the large burner to ensure the pan is evenly seasoned. Instructions for seasoning come with the pans.
Great non-stick alternative.
Can heat a little unevenly but overall I am happy with them and they are a very good alternative to non-stick coatings. Great for cooking eggs - they don't stick.
Solid Pan
We have used this pan a few times so far and have loved it! The item lives up to the Viking brand in quality and durability. The item is heavy and solid, and we haven't had any issues with seasoning or with temps in cooking. I would definitely recommend this to my friends and family for the price and quality. Quality Construction, Great Handle
Easy to season, and seasoned well. The handle of the pan and construction are good. I appreciated the weight. I am curious how well the pan will age. I am not an aggressive cook, generally lower temps. Unsure how this would hold up searing a steak. For the daily scrambled eggs, it works great. It is easy to clean and store.
Do not buy!!!!! Garbage after 1st use. Can’t get it clean. My artichokes turned blue
Wonderful when treated correctly
I just fried 2 eggs on my freshly seasoned pan. Nothing stuck and the pan performed better than my actual non-stick pans. I seasoned them as per the Just One Cookbook method. Carbon steel pans DO NOT RUST when cared for properly. They must be cleaned relatively soon after using, fully dried and lightly oiled before putting away. Carbon steel and cast iron are not for the lazy.
Understand Carbon Steel
I think poor reviews are from people who do not understand carbon steel pan. Watch some online videos on the proper care and use. These pans develop a patina as they are aged and seasoned. It may look ugly or discolored if you don’t understand the tool you have. I doubt these rusted. If you clean them properly they will not rust. And if you see rust, scrub it off and reseason. Don’t mistake a pan that is becoming well seasoned with rust and scrub off your seasoning. Once you understand how fabulous carbon steel is, you won’t want to cook on anything else.

After following the instructions and preping the pans as directed, hand washing them. After 3 months they are all rusted. Expensive and terrible
Worst pan ever
These are terrible. Everything sticks and the first time I used it the surface discolored.
Seasons like cast iron and cooks like stainless
If you know what blue carbon steel is and how to use them properly you’ll love these. They season like cast iron and cook like stainless steel. You need lower heat than normal pans such as cooking with stainless steel. These pans are the best egg pans I’ve ever used. Utensil free flipping. Understand that blue carbon steel will season such as cast iron. These are amazing.

Trash didn't hold up a year and seasoned every use. complete garbage

I used the large pan once and followed the directions to wash pan. After just one usage & wash the pan looked like it was several years old.

Better than expected
Reasonably high quality and Im starting to like them more than my cast iron. Im getting old and arthritis in my hands sometimes wont let me pick up my bigger cast iron. These weigh 1/4-1/3 as much, spread the heat almost as well as thick iron and season easier and faster than cast iron.
Great alternative to fragile non-stick fry pans
Ive used many non-stick fry pans in the past, only to have the coating peel after a few years use. You cant use metal cooking utensils on non-stick pans either, leaving me questioning the safety of plastic spatulas and spoons. My cast iron skillet has always been great for searing meats but too small for some of the things I like to cook. So, I looked for carbon steel pans and this Viking set came up. On eBay, the price was very reasonable compared to other vendors, so I decided to give it a try! The pans cook evenly on my gas stove and can sear at a lower temperature than I needed to use with the cast iron or non-stick pans. Cleaning up is much like my cast iron and steel wok; just rinse, scrub lightly, dry, then heat up and coat with a drop of oil. Its noon stick if you dont remove the oil coating. The blacker the better! The pans feel like theyre excellent quality. Great value for every day cooking!
Great carbon steel pans, especially at less than 40.00 for the set.
Really nice carbon steel pans, with cast iron handles. Very quick heat transfer and uses a lower burner setting than my previous pan. leaves a great crust on the food. I take care of this like a cast iron pan. and its really great. I took care to season it 4 times with coconut oil.
Pretty good, like cast iron without the weight
These pans heat up quickly and brown food nicely. Because they are steel without any coating, you need to season them like cast iron to get the non-stick quality. You cannot leave liquids or acidic foods in them or they will react and rust, like cast iron. We care for ours like a cast iron skillet, brush clean in very hot water and wipe out to dry with paper towel or soft cloth. The color has changed a bit, but this is due to heat patina and seasoning. I personally like the pan design and handle, but it is not like a traditional non-stick with a coating, and more like a cast iron without the weight. I would recommend if you like using cast iron for cooking.
Do not recommend
Not scratch-resistant at all. We hand wash both pans and they look terrible after the 2nd wash/use. Also, they are forming rust spots.
